One of the world's best-known soft cheeses, Brie originates in north-eastern France. Initially, Brie has a mildly flavoured interior that is chalky when young, but it becomes increasingly runny as the cheese matures. It is rich and creamy and, as it melts well, is popular for use in cooking or for serving with crackers and grapes.
